Just arrived at Villa Maria:
Mizithra (this week and next week only!) and Feta, Graviera & Co. from Crete!
According to Wikipedia, Mizithra (Greek μυζήθρα) is a “high-fat Cretan soft cheese made from sheep’s and goat’s whey with the addition of milk. Mizithra is one of the oldest types of whey cheese and is similar in texture and taste to Italian ricotta. Mizithra is white and slightly sweet and creamy.” Not much to add to that… Except that fresh Mizithra can be enjoyed savory – e.g. with a dash of olive oil and herbs – or also as a sweet dessert – usually with honey – and tastes really delicious!
Mizithra is also cooked on Crete in vegetable casseroles or in pasta dishes (like ricotta) and baked in a variety of pastries as a filling (similar to curd cheese). The medium-sized family business Kalogerakis, which has existed since 1949, supplies us with specialties such as feta, graviera, graviera with oregano, graviera with 4 types of pepper, kefalotyri and anthotyro (a cheese matured and hardened by storing it in sea salt) from its modern cheese factory in Smari Pediados, Heraklion province mizithra) as well as fresh mizithra.
